Blueberry Quinoa Bars

Hello, friend! Earlier this morning, I came up with a super quick & healthy recipe for you. As I am slowly cutting off direct dairy from my lifestyle, I had to find a way to keep baking minus the animal-cruelty. Surprise, surprise; eggs and butter don't just come from the supermarket. My eyes have only opened up to vegan treats now, thanks to Pinterest, and oh my lawd they don't only taste better, they're almost guilt-free! These Blueberry Quinoa breakfast bars will surely satisfy and are packed with protein and fiber that will keep you energized throughout the day. It's a great snack for you to keep in your bag, too!
Ingredients you will need:
- 1 cup gluten-free quinoa, cooked
- 1 cup old-fashioned oats
- 1/3 cup pure coco sap sugar
- 1 teaspoon baking powder
- 2 flax eggs -- check how to make them here!
- 1/8 cup chia seeds
- 2 medium-sized bananas, mashed
- 2 tbsp. fresh lemon juice
- 1 teaspoon vanilla paste or extract
- 1/8 cup gluten-free flaxseed meal
- 3 tbsp. almond butter (or peanut)
- 1 1/2 cups blueberries (fresh if available, mine are thawed)
- 2 tbsp. dessicated coconut, optional
Instructions:
- Preheat the oven to 180 Celsius and line an 8x8 square baking tin with parchment paper. Grease the sides of the tin with cooking spray.
- In a large bowl, dump in your quinoa, oats, sugar, baking powder, flaxseed meal, and chia seeds. Whisk together until combined.
- In a separate bowl, stir in your mashed bananas, flax eggs, extract, lemon juice, and nut butter.
- Add half of your dry ingredients to your wet ingredients and whisk away. Once it is all mixed up, add in the other half. The batter shouldn't be runny, but moist and mold-able if that makes sense.
- Fold in your blueberries and pat down batter onto the baking tin.
- Let it bake for 20-25 minutes and allow for it to cool before slicing. Serve with a hug in a mug AKA your favourite tea & enjoy!
