Apple Cinnamon Cupcakes!
9:43 PMIt's December the first and I am feeling as festive as ever! I (might) be doing blogmas this year and I am so flipping hyped you guys. Today, I finally have another baking recipe for you and I cannot wait for you guys to try this out. It tastes delicious with its delicate cream cheese frosting and textured cupcake! Apples and cinnamon definitely remind me of the holidays, so I thought why the heck not. It's absolutely great with a warm cup of tea.
INGREDIENTS!
For the cupcakes:
- 2 Fuji Apples, shredded/grated (I pulsed mine in the food processor)
- 1/4 cup of unsalted butter
- 1 cup granulated sugar
- 1 &1/4 cup of all-purpose flour
- 1/4 tsp. ground cinnamon
- 1 egg, room temperature
- 1/4 tsp. vanilla extract
- 2 tbsp. buttermilk
- 1/2 tsp. salt
- 1/4 tsp. baking powder
For the frosting that is to die for literally heaven sent #bless:
- 450g of confectioner's sugar
- 220g of unsalted butter
- 1/4 tsp ground cinnamon
- 225g cream cheese
- pinch of salt
- buttermilk (to loosen if desired)
Let's get baking!
- Preheat your oven to 180 Celcius and prep up your station!
- In a medium-sized bowl, sift your flour, cinnamon, baking powder, and salt. Whisk it until well combined.
- Beat your butter until creamy with an electric mixer or by hand (it's a workout though!) for about 2-3 minutes. Then, dump in your sugar and egg. Beat for another minute at medium to high speed.
- Add in half of your flour mixture into your wet batter and mix until well incorporated, scrape the sides to thoroughly mix. Then, add in the rest and do the same process of mixing. Fold in your shredded apples into the batter.
- Scoop into pretty cupcake liners about 3/4 full and pop into the oven for 20-25 minutes!
Icing & Piping!
- Whilst your cupcakes are cooling (they have to be completely cool before frosting or else the frosting will melt and it'll be yucky and ugly), prepare a piping bag with a star tip of your choice.
- Beat your butter until creamy and then add in your cream cheese afterwards.
- Add a pinch of salt and your cinnamon and continue to mix.
- Pour in half of your icing sugar and mix. If it's a dough-y consistency, add a very teeny bit of milk. Then, pour in the rest and whisk up at high speed for about 1-2 minutes.
- Spoon in your frosting into the bag and pipe the way you like it! You may add a few apple crumbles on the top for an extra festive look, I just kept it plain because I like how the gold liners are festive as it is.
